2. Mushrooms are slippery and should not be eaten by those with diarrhea. People who suffer from gastrointestinal diseases and liver and kidney failure should not eat mushrooms, because mushrooms contain a substance called chitin, which hinders gastrointestinal digestion and absorption.
3. Don't eat the mushrooms picked from the wild, so as to avoid poisoning when eating poisonous wild mushrooms.
4. Mushrooms contain sodium glutamate. When cooking mushrooms, do not add it in a hot pot, but add it when the dishes are about to come out of the pot. Because sodium glutamate becomes sodium pyroglutamate when the temperature is higher than 120°C, it is harmful to the human body after eating, and it is difficult to be excreted from the body.
5. It is not advisable to add MSG and chicken essence when cooking mushrooms. These are all freshness enhancers, and foods such as mushrooms contain umami ingredients. The sodium glutamate contained in mushrooms also has a salty taste. If MSG is added to cooking food, salt should be added less.
